hey ya'll.
so today was my first day of training on-base for my new cdc (child development center) position.
it was... long. and cold.
lots of paperwork. and i can't even tell you how many times i had to correct my last name =)
it's still kinda' sinking-in that i'm married... hope this is normal!!
so after training i was required to go get yet another form of id and once again... it took forever!!
i probably waited an hour for my number to be called and then another 15 minutes to finish the process.
think dmv but with a lot more camo =)
by now, it's 5:45 and do i really feel like coming home and cooking a out-of-this-world meal?!
absolutely not.
tonight's dinner choice = salad with tons of veggies and chicken.
it was quick and delicious!!
mike the meateterian even enjoyed it =)
salad greens.
sliced, seasoned chicken breast (i used a delicious garlic/herb blend).
yellow pepper.
tomato.
baby corn.
cucumber.
snap peas.
olives.
green onion.
light ranch dressing.
for dessert?? a delicious minuet made frozen raspberry lemonade pop =)
as rachel ray would say... YUMM-O!!
oh.
and long story short: my new paring knife proved its sharpness tonight.

hello first post.
so i wish that my first post could be about a fabulous dish that i created or a one-of-a-kind dessert but due to my laziness and lack of resources, i am going to tell you about an amazing discovery that i stumbled upon.
mike and i were running errands today and were both getting quite hungry. now normally we would grab a bite at taco bell or mcdonald's but being gluten-free makes eating fast food next to impossible. with our options limited, we decided to make a pit-stop at red robin... yuuummm. now if there is something that you need to know about the mauter's, we love beef so this was the perfect place to stop and get a bite to eat.
now i know what you're thinking: red robin. hamburger. hamburger bun. wheat. uh-oh.
NEGATIVE!!
i discovered that red robin offers the delicious option of the bun-free burger, wrapping it in LETTUCE instead of in-between bread!! how fantastic is that?!?
i was simply delighted to know that after eating my banzai burger (fyi- awesome), i was going to feel fit-as-a-fiddle instead of curling into the fetal position for the rest of the day =) it was sweet and tangy and juicy and messy and one of the best gluten-free options out there are far as dining-out!!
p.s. their sweet potato fries (limited time) are excellent... and gluten-free.
